Taking the money

The terminal prices the ticket. It does not take the money, count the drawer, or notice when you are short. That part is entirely yours, and it is the part that gets audited.

Collect after it prints

Print first, then collect. The printed ticket is the priced one, and it is what the customer is buying. Collecting before you print means collecting for a number you have not confirmed.

Change

Take the tender, give back the difference. The drawer expects the ticket price in and the change out, and it will not reconcile if either half is wrong. A tender that does not cover the ticket is not a sale yet.
